Our Macmillan Coffee & Cake Morning

Last Friday at our Swansea office we hosted a Macmillan ‘fun’raising, coffee and cake morning. Lovingly organised by Clare, everyone got involved and baked some glorious cakes. We even had a lemon drizzle cake and a cheesecake baked by two of the men

It wasn’t just about cakes though, there was also a fun treasure hunt and two beautiful hampers up for auction. Don’t those hampers look amazing!?

Our lovely, (if slightly nuts, Frank), won the men’s hamper and after removing his favourite beer, he offered it back for auction. Thank you Frank, a lovely gesture.

Corrine won the ladies hamper which just looks divine and Beverley won the treasure hunt, lucky ladies!

We did of course have a special badge of honour for the best cake creation. After much deliberation, we had to award this to Danielle, for her cupcakes and amazing ‘chocolate creation’. Truly inspirational Danielle, well done!

After all the monies were collected in, our total raised was a fantastic, £310.75!

Thank you to Clare for organising all of this, and to everyone who baked, ate, drank, treasure hunted and bidded, you should be well and truly proud of yourselves.

Linda’s Welsh Cake Recipe

Our Macmillan Coffee & Cake Morning

Welsh cakes are best eaten on the same day but can be warmed up the next day if required.

  • 225g plain flour
  • 85g castor sugar
  • 0.5 tsp mixed spice
  • 0.5 tsp baking powder
  • 100g margarine cut into small pieces (used to be 50g butter & 50g lard! But I don’t do that anymore)
  • 50g currants
  • 1 egg beaten
  • Splash of milk (if needed)
  1. Tip flour, sugar, mixed spice, baking powder and pinch salt into a bowl
  2. With fingers rub in margarine until crumbly
  3. Mix in currants
  4. Work egg into mixture until you have a soft dough adding a splash of milk if it does not stick together
  5. Roll out dough on lightly floured board to thickness of your little finger!
  6. Cut rounds with 6cm cutters
  7. Grease a flat griddle (can be done in frying pan) and place over medium heat
  8. Cook cakes for 2-3 mins each side until golden brown, crisp and cooked through
